This recipe couldn’t be easier. It’s an awesome one pot meal and it tastes like WINNING! (whatever that tastes like…) The whole farm is represented with cow, turkey, chicken and pig, plus all the veggies make this super hearty and super filling! Then there’s the fact that it takes under a 1/2 hour of prep work and an hour-ish of relaxing while the Instant Pot does the work is probably one of the best parts. If you haven’t gotten an Instant Pot yet, you are really missing out!! It is by far one of my most favorite kitchen gadgets, though my stand mixer and stick blender are close seconds. Get one and you will never look back! (This is the Instant Pot I bought) And then make this recipe. Warning: this makes a LOT. So if it’s just you, either cut the recipe in half, or try not to eat it all in one sitting….you will want to try!

- 1 lb grassfed ground beef
- 1 lb ground turkey
- 1 yellow onion, diced
- 4 cloves minced garlic
- 2 bell peppers (any color)
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 medium zucchini, diced
- 1 cup sweet potato, diced
- 1 cup fresh mushrooms, diced
- 1 (28oz) can diced tomatoes
- 1 (28oz) can crushed tomatoes
- 1 T jalapeno, diced
- 1/2 cup chicken broth (or bone broth)
- 2 T fresh basil, minced
- 1 1/2 T pink (or sea) salt
- 1 1/2 tsp ground black pepper
- 2 T chili powder
- 1 T cumin
- 1 tsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 T ghee
- 1/2 pkg cooked crispy bacon, chopped
- optional garnishes: chopped cilantro, avocado, or dairy free sour cream
- Do food prep: chop veggies, cook bacon, defrost any meat.
- Use saute setting on instant pot to saute onion and garlic till translucent.
- Take beef and turkey and cook in a cast iron pan on the stovetop till browned.
- Drain and add to pot.
- Add remaining ingredients to pot (except bacon) and mix well. Seal lid and high pressure cook on the bean/chili setting for 30 minutes.
- When done, mix in cooked bacon before serving.
- May garnish with cilantro avocado or any paleo/primal sour cream. (I use a little organic whole milk yogurt as I am not 100% dairy free)
- Make sure you have a big enough instant pot for this, it makes a LOT! (12-ish cups!!!)
- This can be a make-ahead freezer meal if you prep all the veggies ahead of time and throw them in a bag and freeze. Then when you don't want to put effort into dinner all you need to do is cook the meat and throw it all in the pot!
