This is one of my go-to recipes when I am in need of a sweet fix.  It’s yummy AND good for you.  It’s chocolate.  It’s banana.  It’s frozen.  It’s delicious.  It’s healthy.  What’s not to love?  Plus its easy as heck to make and takes minimal effort. #WINNING  {NOTE: The ghee in this MAKES it what it is.  I’ve tried using coconut oil.  NOT as good. It’s okay, it works, but not EPIC.  Trust the GHEE.}

Paleo Banana Pops
Ingredients
  1. 10 Bananas (newly ripened is best)
  2. 1/2 cup unsweetened cocoa powder
  3. 1/2 cup ghee, softened
  4. 1/4 cup maple syrup
  5. 1/2 tsp vanilla extract
  6. 20 wooden popsicle sticks

Instructions
  1. Peel bananas one by one, then slice them in half width-wise.
  2. Take each half and carefully insert a wooden popsicle stick through the cut end, stopping when the stick is about half way through.
  3. Place each one on a lined cookie sheet (I end up with two full rows) with the sticks all pointing to the middle of the pan.
  4. Freeze for about an hour or till fully frozen. ( Don't prepare chocolate till bananas are done freezing.)
  5. When bananas are ready, heat the rest of the ingredients in a small sauce pan, stirring constantly till smooth and shiny.
  6. Take baking sheet out of freezer.
  7. Immediately remove chocolate from heat, and pour into a tall narrow container (I use a shaker blender cup)
  8. Quickly dip each banana into the chocolate one by one, then carefully put back into place on the cold baking sheet. Make sure that they do not touch each other or you will end up with twin pops. 😉
  9. By the time you have finished one row, the first bananas dipped should be hardened. When you are finished with all the bananas, place back in the freezer for 30 minutes or serve immediately. If you intend on saving some for later, place in a ziplock bag after the final 30 minutes.
